In Devon you’re never more than 35 miles from the sea, which means we get the pick of the crop when it comes to fresh sustainable seafood.

Whether it’s mussels from Exmouth, oysters from Salcombe, or crabs, prawns and scallops from the pristine waters of Start Bay, we have access to some of Britain’s finest shellfish.

So come with us on a trip around the two-coast county and learn to select, prepare and cook a variety of maritime fauna such as:

  • Crab
  • Prawns
  • Mussels
  • Squid
  • Clams

Dishes that you’ll be making from scratch include:

Timbale of Crab with Chilli and Ginger; Crab Bisque; Mouclade (like Moules al la Creme but with saffron); Black Pepper Squid; Crab Parfait.

Techniques learnt:

  • Cooking and dressing crab
  • Shellfish Demi Glaze
  • Seafood stock
  • Storing, cleaning and cooking mussels
  • Storing, cleaning and cooking clams
  • Making a saffron mussel sauce (for the Mouclade)
  • Making a bisque
  • Shelling and cooking prawns
  • Presentation ideas
