Ahh, that most quintessential of British institutions: Afternoon Tea!


On your half day Afternoon Tea cookery course you'll not only be cooking the essential elements, you'll also be learning about what makes the perfect afternoon tea and how to present it in order to show it off at its best.


You'll be making two delicious treats typically found on the afternoon tea cake stand: Mini Victoria Sandwich and Scones with Jam and Clotted Cream.


You'll leave laden with two complete Afternoon Tea goodies.

  • Preparation of baking tins
  • Mixing an all-in-one sponge batter for a light and moist Victoria Sandwich
  • Sieving jam
  • Whipping cream for Creme Chantilly
  • Using real vanilla paste
  • Piping techniques
  • Making scone dough

  • Baking temperatures
  • Baking times
  • Flavour enhancement
  • Presentation ideas
