Traditional Indian Cookery Course (Half Day): Biryani & Pooris

Thanks to popular demand from fans of our One Day Traditional Indian Cookery Course, Nila Ross-Patel has created a delicious half day course in Traditional Indian Cookery, passed down through the generations.

This fun, hands-on cookery class will teach students how to make a layered vegetable biryani with a yoghurt and roasted cumin seed and yoghurt sauce.

Nila will also show you how to create pooris, a leavened bread that is deep fried until puffy and light as air.

Whatever you don't sample during the course itself will come home with you so you can show off your new-found culinary skills to friends and family.

This course is naturally vegetarian and can be vegan on request.

Techniques learnt:

  • Identifying and using fresh and dry spices
  • Dry roasting spices on the hob
  • Making and rolling unleavened bread for pooris
  • Cooking Basmati rice using the combined method of boiling and baking
  • Deep fat frying
