Enjoy an authentic Italian Cookery experience with the passionate TV Chef and cookery book writer, Valentina Harris. On this fascinating one-day cookery course, you will learn all about Venice and its flavoursome cuisine.


Thanks to the city’s unique geographical setting, the traditional Venetian cuisine has always been based on fish, wild game, and any kind of seafood available in the lagoon, in the Adriatic and in the North Sea!


Along with the abundant seafood available, Venetian cooking also abundant with the vegetables that can grow in the surrounding area, such as peas, beans, asparagus, artichokes and radicchio.


In this sociable cookery course, the recipes will be split among the group in groups of two, three or four and everybody will work alongside each other to create the feast! Not everybody will make each recipe, but participants can do more than one recipe if they wish and will be encouraged help each other as required.


Pick up hints, tips and great stories about Venetian cooking from Valentina, who is a well-respected authority on Italian food and food culture, while you help to create a tantalising Venetian Feast. The class will break for coffee mid-morning and will sit down together to enjoy the feast once it is ready.

  • History and traditions of the cooking of Venice and the region of Veneto
  • Stuffing and Roasting a boned duck
  • Making Venetian style risotto
  • Making Polenta
  • Making Prosecco Zabaglione

  • Frutti di Mare Gratinati (Grilled mixed seafood)
  • Risi e bisi (Rice and peas)
  • Anatra col Pien (Stuffed venetian duck)
  • Salsa Peverada (Venetian sauce for roast game)
  • Fegato alla Veneziana (Liver cooked in the venetian style)
  • Peperonata alla Veneziana (Venetian stewed peppers)
  • La Polenta (Basic polenta)
  • Torta di Zucca (Pumpkin cake)
