A whole day playing with chocolate!

On this one-day chocolate course, under the guidance of our professionally trained chefs, you will learn how to temper dark, milk and white chocolate to use in a variety of finished chocolaty products.

Tempering is an essential skill that gives chocolate products their characteristic snap and shine. Once you’ve tempered your chocolate (don’t worry, it’s easier than you think), it’s down to the good stuff making all manner of lovely things.

Chocolate bonbons

First up will be filled chocolate bonbons: you will pour tempered chocolate shells and fill them with a couple of your own delicious fillings (how does Salted Caramel, Mint Humbug Ganache, or Strawberry and Cream sound?).

Next, some coloured chocolate decorations.

Mirror Glaze

Then, the Holy Grail of the pâtissiers art: Chocolate Mirror Glazed Entremet desserts!

Lunch is provided, as is everything you need on the day. What’s more, you get to take home everything you’ve made, along with a comprehensive recipe pack and a signed certificate.

  • Tempering dark, milk and white chocolate
  • Using professional chocolate bonbon moulds
  • Fillings for chocolate bonbons (variously flavoured ganache and caramels)
  • Chocolate decorations such as: fans; quills; thin coloured disks
  • Chocolate and caramel mousse
