Foraging and Wild Cookery Course
ONE DAY COURSE (9.30am - 4.30pm)

This fascinating one-day course will give you the skills, knowledge and
confidence to forage, source and cook wild seasonal ingredients.
Head out with professional forager, Joanna Ruminska, on a unique experience
discovering the local bounty around Exeter’s wild spaces.
In the morning:
In the morning Joanna will lead you from the cookery school, down the canal
to forage a variety of seasonal produce. You will then bring it back to the
cookery school and cook it up for lunch.
If the weather’s kind, you’ll even get to do a bit of cooking and have a
light picnic lunch ‘in the field’. However, we can't garantee the weather (if
only!), so be prepared for rain and bring waterproof clothing and stout shoes
or walking boots.
Identifying edible species:
You'll learn how to identify each edible species and will receive tips on
avoiding potentially inedible look-a-likes. You’ll gain an insight into how
seasonally foraged ingredients can be used in a variety of recipes and dishes
Walk on the Wild side
During your walk, you'll also be tasting a range of pre-made wild preserves
to get your taste buds tingling and cook’s engine turning.
Expect to try things
like wild jams, chutneys, ketchup, infused spirits, salt pickled greens, wild
vinegar dressings, and much more.
In the afternoon:
After lunch, you’ll be back at Exeter Cookery School cooking with more wild
ingredients you’ve found. You will be guided through the process of sorting,
cleaning, chopping, boiling, baking and mixing your wild ingredients to create
some delicious dishes for everyone to enjoy.
At the end of the day, you will be given not only a list of everything you
foraged, but also recipe cards and a recipe pack for everything you cooked up
during the course.
