In Devon we’re never more than 35 miles from the sea, which means we get the pick of the crop when it comes to fresh sustainable seafood.

Whether it’s mussels from Exmouth, oysters from Salcombe, or crabs, prawns and scallops from the pristine waters of Start Bay, we have access to some of Britain’s finest shellfish.

So come with us on a trip around the two-coast county learning to select, prepare and cook a variety of maritime fauna, such as:

  • Crab
  • Prawns
  • Mussels
  • Squid
  • Scallops

Techniques learnt (depending on seasonal availability):

  • Dismantling and dressing a whole cooked crab
  • Seafood stock
  • Storing, cleaning and cooking mussels
  • Storing, cleaning and cooking scallops
  • Making a saffron and curry mussel sauce (for the Mouclade)
  • Making a crab bisque
  • Preparing squid
  • Pan-frying squid
  • Shelling and cleaning scallops
  • Pan-frying scallops
  • Roasting scallops with a herb crust
  • Presentation ideas

These are the dishes you could be making (depending on seasonal availability):

  • Timbale of Crab with Ginger & Chilli
  • Mouclade (think Moules a la Creme, but with saffron and mild curry flavours)
  • Seafood Bisque
  • Black Pepper Squid
  • Seared Scallops
  • Scallops Roasted in the Half Shell with a Herb Crust
