One Day Traditional Indian Cooking Classes

Nila Ross-Patel, our Indian cookery tutor at Exeter Cookery School, will teach you how to create authentic Indian cuisine the way her mother taught her (see Nila's biog).

You will discover how the dishes fit in with the cultural and geographical influences of India. This knowledge is a result of Nila’s multicultural upbringing in the UK and family trips to India.

If you love a good curry, this is the course to come on to develop your own flavours of India.

In the morning you will learn how to select and dry-fry your own spices. At morning break time, you will have Masala Chai served with samosas and avocado dip. You will then prepare Pillau rice using Nila's fail-safe absorption method, producing your own fluffy and fragrant rice.

Lunch will be the main course you cooked earlier - typically a chicken or vegetarian Korma, served with Pillaua Rice, Spiced Cauliflower and Peas.

After lunch, you'll make Rutli (chapatti) dough. Nila will show you how you shape the Rutlis and fill them with a samosa filling.

Techniques learnt:

  • Identifying and using fresh and dry spices
  • Preparing your own spice mix, for example jeera or dhana mix
  • Making and rolling unleavened dough for samosas and rutli (chapatis)
  • Cooking basmati rice using the absorption method
  • Deep fat frying
  • How to dry fry spices
  • Making samosas

  • Samosas (vegetarian)
  • Chicken korma (a 16th Century dish originating from the Moguls) - Vegetarian or vegan options available
  • Pilau rice
  • Spiced green beans in mustard seeds
  • Hands-on lesson in how to make samosas
